Chef Eric Rose had the experience of a lifetime during the spring 2014 semester. He was part of an all-star team of Central New York chefs who traveled to New York City to prepare a meal at the world famous James Beard House. “Going there was like being in the Super Bowl. It was awesome,” said Rose.
The local dream team of chefs was put together by Chance Bear, executive chef at the Lincklaen House in Cazenovia. Bear selected Rose and five other chefs. They put together dishes highlighting what New York has to offer. The seven-course meal was called an “Empire State Dinner.” Upstate New York menu items included Utica Greens, a fish fry and Buffalo chicken wings. Tickets to the dinner cost $170 per person.
The James Beard House is located in Greenwich Village. It’s run by the James Beard Foundation which raises money for culinary and hospitality related scholarships. “In our industry having the opportunity to be at the Beard House is like the Oscars of being a chef. It was a tremendous honor.”
